I would not, Plastidip is a huge pain to take off. And before someone says that it is easy, go put it on some wheels and then try to take it off. Of course I was not the installer when I had to remove the stuff, but it was a HUGE pain to take off.
The removal goes hand in hand with the prep work. I have done this type of thing on a couple of my friends cars and as long as you had a nice clean surface and the correct amount of layers it came of easy. With that being said i would avoid only doing the hood as it will look gaudy in my opinion.
idk about you but I'm a perfectionist and the skill it takes to cover a hood perfectly with vinyl with no bumps or wrinkles is close to impossible....im very good with vinyl and i still wouldn't do my hood.....and plus it looks goofy, I've seen it before and it didn't look well.....i would suggest you black out your roof but from your picture i can see that ur car is black lol
