What is this 0-60 gauge on the monochrome multi-info display?

Welcome and congrats on the new Corolla!
That is the instantaneous MPG reading. As you drive, it'll show you your fuel mileage at that very moment so if your are accelerating hard, the level will go down but if you are cruising at a set speed at low rpms, the meter will be higher. Above it is your average MPG reading which is the number. On page 100 of the owners manual, it explains this a bit more:
